Innomalt is a malting plant founded by two biology PhDs, Raphaël Sansregret and Pascal Viens. The company is Québec’s only malting plant to offer “Floor malt,” a high-quality malt with strong value added. The new Innomalt infrastructure, located in Sherbrooke, makes custom malt production possible, to meet specific brewer needs. The company will also produce roasted malts and smoked malts using different types of wood and peat, and will be the sole producer of this type outside Scotland.
